So last time we were talking about the importance of getting those veggies in. I’m following that up today with two more ways to get veggies into your diet. It’s so important to make veggies a priority in your diet. And I know that a lot of people can really struggle with this, but don’t worry! It really does take practice for someone to transition into a new lifestyle. So keep up the good work, and let’s get into part two!
The second way to make sure that you get all of those veggie in is to pile up your plate with cooked or steamed vegetables at dinner.
So you can have that salad at lunch, and then by dinner you have a plate full of those vegetables and then you add in your protein. Maybe you can cook some healthy fats in there like coconut oil or something like that. But really keep that focus on the vegetables first. Your plate should be half to three quarters full of vegetables.
The third way is to juice or blend your vegetables. You can easily get 5-10 servings of vegetables in just one drink. It’s just a matter of actually getting it done.
So with some people, they will start to juice and then they’ll take it with them through the day. And the problem with that is as soon as you blend of juice your vegetables they start to oxidise, which means that they start to lose their nutrient content. So what you want to do is either drink it immediately, or put it in a dark, stainless steel container that you can take with you and keep refrigerated. If you store it that way it will maintain that nutrition level for about three to four hours, which is better than the alternative. It’s still not at 100%, but it’s surely better. And you could also juice and then immediately freeze it, and that will help it to maintain that nutrition level.
So each time that you’re eating your vegetables, you are getting a higher level of vitamin, mineral, and fidonutrients. You are also getting a lot more water content than you would with other foods. The more vegetables that you eat, the more water content you’ll have coming in and that will make your body more hydrated.
Okay, so where do thing like potatoes, beans, and other starchy vegetables fit in with all of this. Because I know that a lot of people are so fearful of those things and think that it’s going to cause problems as far as their goals are concerned.
So the truth is that people eating a plant based diet are not going to have the same fattening issues that someone eating a non-plant based diet are going to face. Protein can come from your beans, but your beans are also a vegetable. Same thing with your potatoes, and lentils. Those are great sources of vegetables. And if you’re eating them, the main thing that I would recommend is that you exercise that day.
On your workout days, those kinds of foods can be helpful. But you want to make sure that you are actually getting your heart rate up and really exercising. Not just a walk around the park, not yoga or pilates, but something that gets your heart going and your metabolism up. Getting those starchy vegetables in will help you to refuel after your workout.
So I know that for a lot of people, they feel like eating vegetables is an optional thing. But it doesn’t matter if you drink them, bake them, broil them, steam them, eat them raw, you can eat them any way that you want. Just know that the more vegetables that you get in, the more changes you will see in your body, health, and energy. You will literally be able to feel the changes either overnight or in a few days just from increasing your vegetable intake. You will also start to be feeling more full, so you won’t be grabbing for those unhealthy snacks.
